Here’s a healthy scrambled eggs recipe

Ingredients

4 egg whites- you can use whole eggs if you prefer but that will increase the calories and cholesterol of the recipe

1 tablespoon chopped onion

1-2 green chili- if you like spicy

½ cup baby spinach or chopped regular spinach

1 tablespoon- grated cheddar cheese

1 teaspoon oil- Oil spray can be used as well

Salt- according to taste

Instructions

    1. Sauté the onions in a non-stick pan using oil or oil spray
    2. When onions become translucent add spinach and chopped chili and sauté for a couple minutes till almost cooked.
    3. Add eggs and stir till the eggs are almost cooked.

  • Add cheese and stir for another minute, turn off the gas before cheese starts sticking to the pan.

 

 

The above recipe serves one. Serve the scrambled eggs with regular bread or focaccia.
