Peri Peri spice mix- 4 teaspoons (Use less if you prefer less spicy)

If Peri peri spice mix is not available use -1/2 teaspoon each of Garlic powder, Paprika, black pepper, 1.5 teaspoon Parsley, 1 teaspoon crushed chili

Salt- according to taste

Onions- 1 medium

Spinach- 1 bunch

Capsicum- 1

Brocolli- I medium head

Lean sausages- 300 gm (Can use lightly fried hard tofu to make a vegetarian version)

Bolied rice- 2 cups

2 eggs – scrambled with little salt

Oil- 2 tablespoons



1. Cook the sausages, let them cool, chop into smaller pieces and set aside.

2. Heat oil in a pan, add sliced onions and fry them till light brown in color.

3. Add chopped broccoli and capsicum and cook till almost done, then add spinach and cook for another couple of minutes till its wilted.

4. Add Peri peri spice mix, salt, cook for a minute and then add the boiled rice, sausages (or lightly fried diced tofu) and scrambled eggs.

5. Cook for couple minutes and serve hot.

Serves about 4 people.
