Cheesy Baked Rice

  •  2 cups leftover rice
  • 1/2 cup marinara sauce
  • 2 cups mixed veg- broccoli, beans, carrots, corns and peas.
  • 1/2 cup mozzarella cheese (shredded)
  • 2 tablespoons parmesan cheese
  • Oil- 1 tablespoon
  • Salt- to taste
  • Chili flakes (optional)
  • Fresh chopped oregano- 1 tablespoon
  • Pepperoni (optional)



  1. Heat the oil in a pan and cook the mixed vegetables.
  2. In a baking tray- mix the rice, marinara sauce, 1/2 the quantity of parmesan and mozzarella cheese and the vegetables.
  3. If you are using pepperoni spread it over the rice mixture.
  4. Sprinkle the rest of the cheese on top and sprinkle some fresh chopped oregano.
  5.  Bake at 180 degrees for 15 minutes or the cheese on top is golden brown.
  6. Serve hot.
